Pessarattu Moong Dal Dosa
  • Buy locally grown organic ingredients, if possible

    • 1 cup white rice

    • 1/2 cup water, more as needed

    • Ghee, as needed (make organic ghee at home)

    • Rock salt (saindhav salt) to taste

    1. Made predominantly of rice, Neer Dosa is a good source of energy and carbohydrates, making it a fulfilling meal.

    2. Owing to its unfermented nature, the dosa promotes sattva or purity, fostering clarity of mind and calmness.

  • Those with a dominant Vata dosha might find Neer Dosa slightly cold and dry, which can aggravate their constitution. Hence, it's recommended to pair it with warm, moist accompaniments.

Recipe Serves 8-10

Directions:

  1. Begin by washing your rice thoroughly. Immerse it in water, allowing it to soak for a good 3-4 hours.

  2. After the soaking duration, drain off the excess water and blend the rice, adding fresh water incrementally to achieve a smooth, thin buttermilk consistency. Pour this watery batter into a large mixing bowl and add salt to tatse. Mix it well to ensure even distribution.

  3. Heat up your griddle and brush it lightly with oil. Pour the watery batter in the center, ensuring it spreads out thinly across the griddle's surface. Allow the dosa to cook until its edges start to peel away. Given the Neer Dosa's translucent nature, there's no need to flip it. Once done, transfer it to a serving plate. Serve this delicacy alongside coconut or cilantro chutney.
