Narali Bhat Recipe (Sweet Coconut Rice)

Buy locally grown organic ingredients, if possible
1 cup white rice, raw
3 teaspoons ghee (make organic ghee at home)
7-8 whole cloves
2 cups water, hot
1 1/2 cup fresh grated coconut or shredded coconut
1 1/2 cup jaggery (gud), powdered
4 green cardamoms, whole or freshly ground
4-5 strands saffron
A pinch of rock salt (saindhav namak)

Recipe Serves 3-4
Directions:
Begin by cleansing and soaking the rice, allowing it to soak in water for two hours. Upon completion, ensure thorough draining.
In a pan, heat up the ghee, add cloves and the soaked rice, sauté for a short while (1-2 min). Gently pour in hot water and let it simmer until the rice grains cooked throughly.
In another pan, add ghee and sauté coconut for 1-2 min, add jaggery, cardamom, saffron, and a pinch of salt and mix it well. Add the cooked rice into this, let it cook for a few more moments on gentle heat.
Before serving, garnish with shredded coconut.
